So I am continuing with my 101 in 1001 goal to make a new cupake recipe every month for 12 months. I started in November so this is only mr third month. For January I chose Apple & Cinnamon Cupcakes from Cupcake Heaven by Susannah Blake. I took these to afternoon tea with my cousins and my parents this afternoon and everyone loved them. I highly recommend trying out this recipe!
Apple & Cinnamon Cupcakes (recipe from Cupcake Heaven)
Cupcakes
85g unsalted butter
100g caster sugar
1 egg
125ml sour cream
150g self raising flour
1/4 teaspoon bicarb soda
1/2 teaspoon ground cinnamon
1 apple peeled, cored and diced
To decorate
80ml sour cream
100g icing sugar
berries of your choice
Preheat oven to 180 degrees celsius (350 farenheit)
Beat butter and sugar until pale and creamy then gradually beat in egg. Stir in the sour cream. Combine the flour, bircarb soda and cinnamon and sift into mixture. Fold in to butter mixture along with the apple.
Spoon mixture into patty cases and bake for 20 minutes until golden brown. Allow to cool before decorating.
To decorate combine sour cream and sifted icing sugar in a bowl. Beat for 1 minute until smooth and creamy. Add more icing sugar if the icing is too runny. Top each cupcake with icing and berries of your choice.

The cupcakes sound so yummy! And I absolutely love your photo! Especially the icing dripping right off, it looks like something you would see in a baking magazine or cookbook!
That cupcake looks delectable--I love the icing falling down the sides. And the raspberries on top--oh my. =)
